Lela’s lobster deviled eggs are one-bite wonders, little mouthfuls of perfection. There’s so much going on in this tiny package that it’s hard to believe this is the same humble dish that graces many a potluck and picnic table. These are definitely not your aunt Edith’s deviled eggs.
The egg yolks are whipped to a velvety smoothness, piped back into their egg white cocoons, then topped with a generous piece of sweet lobster. But it doesn’t stop there. Piled atop the lobster is a slice of crispy pancetta which is crowned with a dollop of tarragon aioli and a scattering of trout roe, then garnished with wispy bits of frisee. These masterpieces are on the starters menu, but who’s to say you can’t make them your main course?
